Rum

The basic ingredient in Rum is sugar cane (fresh cane juice, cane syrup, or molasses).

Cane Juice is the liquid extraction from simply crushing the sugar cane. Cane Syrup is the thick liquid produced by reducing the cane juice. Molasses is the liquid left behind when all the sugar has been crystallized and removed from the boiled sugar cane juice.

Aging

Silver rum (white rum) - is bottled after it comes off the still.
Golden rum - is aged a minimum of one year either in oak barrels or stainless steel tanks.
Dark rum - is aged three years or more in charred oak barrels.

Countries of Origin

Rum has different characteristics depending on the country of origin.

Delicately flavored rums that are mainly white, but can include some golden or aged rums (Cuba, Bahamas, Puerto Rico, Trinidad, The Dominican Republic, Virgin Islands). Elegant and perfumed rums (Barbados); Pungent and fruity rums (Jamaica); Or, a grassy, fruity style of rum made from fermented cane juice – Rhum agricole (Martinique, Guadeloupe, Hati).
