Baked Ham with Brown Sugar, Spice & Rum Glaze

  • 1 spiral sliced ham
  • For the glaze:
  • 2 tablespoons butter
  • 8-10 ounce  of pineapple juice or orange juice (whatever your preference)
  • 1 ½ cups firmly packed light brown sugar
  • ¼ teaspoon  cinnamon
  • 1 bay leaf
  • ½ cup dark rum
  • ⅛  to ¼ teaspoon cayenne pepper
  • Pinch of kosher salt


  • Preheat an oven to 350°F.
  • Melt butter in a medium saucepan over medium-high heat.
  • Add pineapple juice or orange juice, light brown sugar, cinnamon and bay leaf. Bring to a boil.
  • Reduce heat and simmer until mixture has thickened enough to coat the back of a spoon. Remove from heat and add rum, cayenne, and salt.
  • Warm the ham in the oven according to the package directions. About half way through heating, brush the ham evenly with some of the glaze.
  • Return the ham to the oven and bake until done, brushing it with the remaining glaze every 15 minutes.
  • Once removed from oven, let the ham sit to rest then carve.

Pineapple Daiquiri Punch

In a pitcher combine 12 oz. Mt. Gay rum, 4 oz. Liber & Co. pineapple gum syrup, 4 oz. lime juice, 12 dashes bitters and 8 oz. club soda. Stir and pour into Tiki mugs filled with crushed ice. Garnish with a mint sprig.

Treaty Oak Mai Tai

  • 1 oz. Treaty Oak Rum
  • 1 oz. Treaty Oak Barrel Reserve Rum
  • 1/2 oz. Paula’s Texas Orange or Pierre Ferrand Orange Curacao
  • 3/4 oz. Fresh Squeezed Lime Juice
  • 3/4 oz. Orgeat (Almond Syrup- B.G. Reynolds brand works well)
  • Mint Sprig and Lime wheel for Garnish

Combine the Treaty Oak rums, orange curacao, orgeat, and lime juice in a mixing glass and shake vigorously with ice to chill. Strain drink into a glass filled with crushed ice. Garnish with the mint sprig and lime wheel on the rim of the glass.

Whip It and Tip It (Apple Pie Shot)

  • 1 oz White Hat Rum
  • 1 oz Apple Juice
  • Dash of Cinnamon
  • Dash of Nutmeg
  • Whipped Cream

Combine rum, apple juice, cinnamon and nutmeg and ice into a shaker tin. Shake well and strain into a shot glass. Top with whipped cream and sip or shoot.

Derby Daiquiri

  • 1 ½ oz Sailor Jerry
  • 1 oz orange juice
  • ½ oz lime juice
  • ½ oz simple syrup

Shake & strain into your favorite martini or coupe glass.
Garnish with a small slice of orange or lime or both.

Captain V’s Grog

  • 1 ½ oz Sailor Jerry
  • ½  oz grapefruit juice
  • ¾ oz lime juice
  • ¼ oz orange juice
  • ¾ oz spiced simple syrup* (you can always add to desired taste)

Shake & strain into your favorite glass with new ice.
Garnish with a cinnamon stick or small dash of cinnamon.

*Spiced simple syrup: This is just like the simple syrup recipe, equal parts sugar and water, and add 3-6 dashes of cinnamon. If you use granulated it will be slightly more cloudy then if you used cinnamon sticks.
